Chicken Stir-fry with Cashew Nuts.
Ingredients:
500 g chicken meat, cut into cubes
100 g cashew nuts
200 g button mushrooms, cut into slices
1 onion, cut into wedges
2 paprikas (green, yellow or red)
2-3 slices of ginger
1 clove of garlic, chopped
1-2 stalks of spring onions, julienne
Seasoning:
1 tbsp flour (corn or potato flour)
1 tbsp sesame oil
1 tbsp soya sauce
A pinch of pepper
2-3 tbsp oil
2 tbsp oyster sauce
1 tsp sugar
1 tbsp flour mixed with 100 ml water
Method
Marinate the meat with flour, sesame oil, soya sauce & pepper for about 1 hour.
Heat up the wok with oil and sauté the ginger, garlic and onions.
Add the chicken meat and stir-fry for about 1-2 mins then add the mushrooms and paprika.
Add oyster sauce and sugar to taste.
Add flour mixture a little at a time to desired texture and stir in the spring onions.
Sprinkle the cashew nuts, dish up and it is ready to be served with steamed rice.
